4. Pumpkin Puree: You'll need 1 and 1/2 cups (or 340g), or the majority of a typical 15-ounce can, of pumpkin puree. Avoid utilizing pumpkin pie filling. The ideal pumpkin to use is canned, just as in these pumpkin snickerdoodles, but you could also use fresh puree if that's what you have.

5. Oil: Without some fat, it will taste rubbery and dry. Use vegetable oil as though you were baking pumpkin cake or pumpkin coffee cake. Melted coconut oil is an additional option.

6. Brown and White Sugars: To let the flavor stand out, I slightly cut the sugar from where I started (pumpkin crumb cake muffins). A little brown sugar is also used to add taste.

Ingredients

To make this snack you should put together 2 cups all-purpose flour, 1 teaspoon baking powder, 1/2 teaspoon baking soda, 1/2 teaspoon salt, 1 teaspoon ground cinnamon, 1/2 teaspoon ground nutmeg, 1/4 teaspoon ground cloves, 2 eggs, 1 cup granulated sugar, 1/2 cup vegetable oil, 1 cup pumpkin puree, 1/2 cup milk and 1 teaspoon vanilla extract.

 

Preparing the Batter

Combine the flour, baking soda, baking powder, cinnamon, salt, nutmeg, and cloves in a mixing dish. Eggs and sugar should be well mixed in a separate basin. Mix the egg mixture well before adding the vegetable oil, milk, puree, and vanilla essence. Stirring occasionally, add the dry ingredients in small amounts to the wet components. A thick muffin can result from overmixing, so take care not to do it.
